Ceremonial Grade Matcha [100% Hand-Picked & Stone-Ground]
This matcha is made entirely from 100% hand-picked tea leaves, carefully plucked one by one from naturally shaped “shizen-shitate” tea bushes. This natural-style cultivation is usually reserved for teas specially grown for competitions, but at KOKAEN, in pursuit of the finest flavour, all hand-picked teas are cultivated in this way. This hand-picked matcha is distinguished by its silky-smooth mouthfeel and pronounced fragrance, along with a refreshing, clean finish that gently fades after each sip, making it a bowl you will want to enjoy every day. It is best enjoyed as usucha (light, thin tea).
Every step of the process – from cultivation and primary processing through finishing and stone-grinding – is carried out solely by the owner of KOKAEN, a champion of the Kyoto Tea Appraisal Technique Competition.
Production takes place in Yoshiwara Town, a historic tea-growing region dating back to the Edo period, where the soil is enriched mainly with organic-based fertilizers and the tea is grown with great care for harmony with the natural environment.
By carefully attending to each step, from preparing the soil in the fields to the final stone-ground matcha powder, this tea is crafted to offer both deep umami and a refined, lingering finish.

【手摘み100%・石臼挽き100%】
この抹茶は、自然仕立ての茶園で一枚一枚ていねいに手摘みした、手摘み茶葉100%の抹茶です。本来このような自然仕立ての栽培は、品評会に出品されるような特別な茶葉のために用いられる方法ですが、高香園ではより高いおいしさを追求し、手摘みのお茶はすべてこの栽培方法で育てています。手摘みならではのなめらかな口当たりと香り高さ、飲んだ後にスッと消えていく爽やかでキレの良いあと味が特徴で、毎日でも飲みたくなる一服です。薄茶としてお楽しみいただけます。
栽培・製造・仕上げ・石臼挽きに至るまでのすべての工程を、京都府茶審査技術競技大会で優勝経験を持つ高香園の園主が一貫して担っています。
生産は、江戸時代からの茶産地として知られる愛知県豊田市・吉原町で行われており、畑の土づくりには主に有機質肥料を用い、自然環境との調和を大切にした栽培を行っています。
畑の土づくりから最終的な石臼挽きの抹茶になるまで、一つひとつの工程を丁寧に積み重ねることで、豊かな旨味と上品な余韻をあわせ持つ抹茶に仕上げています。
