The owner of Kokaen personally selects tea leaves from multiple cultivars and grades, roasting each one over direct heat to the level best suited to that leaf in order to bring out a toasty, layered hojicha aroma while preserving the tea’s natural umami.
The roasted leaves are then stone-ground into a fine powder, making it easy to use in lattes and desserts.
As a champion of the Kyoto Tea Appraisal Technique Competition, the owner of Kokaen personally carries out every step from direct-fire roasting to stone-grinding.
